At least 15 minutes ahead of time, toast some coconut for the rim. Then, prep the glass, rolling the rim in some honey, then in the toasted coconut.
Cream of coconut has a thick, fatty layer on top, with a thin liquid below. Spend some time mixing this well before adding it to the shaker.
Ingredients
1 1/2 ounces vanilla vodka*
1 oz coconut rum
1/2 ounce cream of coconut
Splash of pineapple juice
* If no vanilla vodka is on hand, simply add some vanilla extract to regular vodka.
Pour ingredients over ice in a shaker. Shake for the internationally recognized shaking time, then pour into the martini glass through a strainer.
